INDIAN CHILLI CHICKEN RECIPE:

Ingredients:

500-600gms. boneless chicken (cut into1-inch cubes)
2 tbsp Soya sauce
1 egg
2 tbsp corn flour / corn starch
5-6 green chilies (finely chopped)
2 green onion tops (finely chopped), if available
1 tsp garlic paste
Salt To Taste
1/2 tsp white pepper powder or to taste
1 tsp sugar
A pinch of ajinomoto (optional)
2 cups chicken broth / water
1 tbsp oil
Oil to fry

How to make chili chicken :

Take 1tbsp. Soya sauce, 1tbsp. corn flour, salt, egg in a bowl and marinate chicken pieces in the the mixture for about 10-15 minutes.
Heat oil and deep fry the marinated chicken pieces till golden brown.
Now in a separate wok / kadhai heat 1 tbsp. oil and add garlic paste and green chilies and saut for few seconds.
Add 2 cups of chicken broth or water. Bring to boil and add sugar, pepper powder, salt , ajinomoto and remaining Soya sauce.
Add fried chicken pieces to it and cook for few minutes.
Dissolve the remaining corn flour in 1/2 cup water and add to the curry stirring constantly to avoid lumps. Cook for 2-3 minutes.
Serve chilli chicken hot garnished with chopped green onion tops. Goes well with steamed / boiled rice. s-cooking

CHICKEN FRIED RICE RECIPE:

(Preparation time: 10 mins)

Ingredients:

4 cups cold cooked rice
8 ounces cooked chicken (or substitute cooked turkey, etc.), chopped
2 eggs (more if desired)
1/2 cup green peas
1 medium onion, diced
1 green onion, diced
Seasonings (add according to taste):
Light Soy Sauce
Oyster sauce
Salt
Pepper
Oil for stir-frying, as needed

Preparation:

Beat the eggs lightly with chopsticks, add a dash of salt (Add a bit of oyster sauce if desired).
Chop the chicken meat and dice the onion and green onion.
Heat wok and add oil. When oil is ready, pour 1/2 of the egg mixture into the wok and cook over medium heat, turning over once. Cook the other half the same way. Cut the egg into thin strips, and save for later.
Stir-fry the onion on high heat for a few moments, remove and set aside. Do the same for the green peas.
Add oil, turn down the heat to medium and stir-fry the rice. Add the soy sauce, salt, pepper and oyster sauce. Add the chicken, onion and green peas and combine thoroughly. Serve chicken fried rice with the strips of egg on top and the green onion as a garnish. (Alternately, you can mix the green onion and egg in with the other ingredients).

KERALA STYLE PRAWNS FRY:

Its as good as it looks...trust me! :) This one is as easy as it can get...Cooking it in coconut oil add to the flavor and gives the prawns the perfect Mallu touch. Chemeen fry can be served as a starter or as a side accompaniment to rice/rotis

Ingredients:
Prawns - 250grams, deveined
Red Chilli powder - 1tsp
Turmeric - 1/2tsp
Ginger Garlic Paste - 1tsp
Salt to taste
Curry leaves
Mustard seeds - 1tsp
Coconut oil - 1tbsp
Lemon juice - 1tsp.

Marinate the prawn with red chill powder, turmeric powder, salt, and ginger garlic paste for about an hour.

Heat the coconut oil, add the mustard seeds. Once they splutter, add the curry leaves and then the marinated prawns.
Cook for about 5mins. Remember prawns cook fast..remove from fire in 5mins else it will overcook.
Serve hot and top with some freshly squeezed lemon.

FISH FRY -MEEN VARUVAL

Ingredients:
Fish (Small pieces)- 4
Ginger garlic paste- 1/2 tsp
Small onion- 4
Curry leaves- 2 sprigs
Coriander leaves- 1 or 2 sprigs
Lemon juice- 1 tsp or to taste
Chili powder- 1 tsp
Cumin powder- 1/2 tsp
Coriander powder- 1
Turmeric powder- 1/4 tsp
All purpose flour- 2 tsp
Salt- as required
Oil- for fry
Recipe:

Clean Fish and keep this aside.
Grind Onion, Curry leaves and Coriander leaves.
Make a thick masala paste by mixing Ginger garlic paste, Chili powder, Cumin powder, Coriander powder, Turmeric powder, Salt, Lemon juice and ground items.
Coat the both sides of the fish by applying prepared masala paste . After that sprinkle All-purpose-flour to make the masala paste stick to the fish.Let the fish marinate in this masala paste for 1/2 an hour.
Heat Oil in a pan. Keep the stove in medium flame and fry both sides of the fish till it turns into dark brown in color.
Goes well with rice.

HYDERABADI CHICKEN BRIYANI

Ingredients:
1. Chicken kg
2. Basmati rice kg (cooked)
3. Curd 1 cup
4. Onion 1 finely sliced
5. Lime juice of the lemon
6. Ghee cup
7. Ginger 1 inch piece
8. Garlic - 3 flakes
9. Red chilli powder 1 tsp or to taste
10. Coriander powder 1 tsp
11. Garam masala 1 tsp
12. Turmeric powder tsp
13. Saffron tsp
14. Bay leaf 2
15. Cardamoms 3
16. Cinnamon 1 inch stick
17. Cloves 4
18. Cashwenuts 10
19. Coriander leaves cup (roughly chopped)
20. Mint leaves cup (roughly chopped)
21. Salt to taste
Method:
Marinate the chicken with curd, red chilli powder, coriander powder, turmeric powder and salt for 1 hour.
Cook the basmati rice with enough salt, till half done and drain the water and keep it aside.
Make a paste with ginger, garlic and keep it aside.
Soak the saffron strands in 1 tbsp warm milk and keep it aside.
Take a pan and heat with ghee.
Add cashewnuts, bay leaf, cardamom, cinnamon and cloves.
Saut for few mins.
Then add onins and ginger garlic paste.
Saute till the raw smell disappears.
Then add marinated chicken pieces and garam masala.
Mix well and fry well till the curd is absorbed.
Add enough water and cook till the chicken pieces are tender.
Now divide the cooked rice into two portions.
Take few semi-cooked grains of rice and colour them with diluted saffron for garnishing.
Place half of the semi cooked rice in the heavy bottomed vessel.
Then spread half of the chicken gravy.
Sprinkle some coriander and mint leaves.
Again spread by a layer of remaining rice.
One more layer of remaining chicken gravy.
Again sprinkle remaining coriander and mint leaves.
Close the vessel tightly and cook on low flame for 30 to 45 mins.
Remove from the heat.
Hyderabad biryani is ready.

STUFFED CHICKEN RECIPE:

Chicken breasts are stuffed with mozzarella cheese, bread crumbs, and herbs.

INGREDIENTS:
6 boneless chicken breast halves
1 tablespoon vegetable oil
1 tablespoon butter
1 medium onion, sliced
4 ounces sliced mushrooms
1 rib celery, thinly sliced
1 egg, beaten
1 tablespoon chopped fresh parsley
2 tablespoons fine dry breadcrumbs
2 teaspoons grated parmesan cheese
3/4 cup shredded mozzarella cheese
salt and pepper
1 can (10 1/2 ounces) condensed tomato soup
1/2 cup water
1/2 teaspoon leaf basil, crumbled
PREPARATION:
Place chicken pieces between sheets of plastic wax; gently pound with a meat mallet to flatten evenly. Be careful not to tear or break through.
In a large skillet, heat vegetable oil and butter; saut onion slices, mushrooms, and celery until tender.
Add egg, parsley, bread crumbs, Parmesan cheese, and mozzarella cheese. Stir to blend well.
Sprinkle chicken breasts with salt and pepper; fill with even portions of the filling mixture. Roll up and secure with toothpicks. Arrange chicken breasts in a shallow 3-quart baking dish, spooning any extra filling around the chicken rolls. Mix soup with 1/2 cup water and the basil; pour over chicken.
Bake at 350, basting occasionally with sauce in the baking dish, for 1 hour. Remove toothpicks and serve with rice or potatoes. Serves 4 to 6.

GOBI MANCHURIAN RECIPE

Ingredients of cauliflower manchurian :
1 medium Gobhi (Cauliflower)
3/4 cup Flour (Maida)
1 tbsp Corn Flour
Salt to taste
1 Chopped green chili
1 1/2 tbsp Garlic Paste
1 1/2 tbsp Ginger Paste
1 cup finely Chopped Onions
Finely Chopped Coriander Leaves
1/4th tsp Ajinomoto
2 tbsp Soya Sauce
2-3 tbsp Tomato Ketchup
2 tbsp Oil
Preparation of gobhi manchurian :
Make a paste of maida, corn flour and salt using water.
Take a tsp. of ginger and garlic paste, add it to the paste.
Dip the gobi florets in the paste and deep fry till golden brown. Keep aside.
Heat oil in another pan and add the left ginger & garlic paste, chopped onions and green chili to it.
Now, mix aginomoto, soya sauce and tomato sauce to it.
Add fried Gobi kept aside and mix well. Garnish it with coriander leaves. Serve the gobi manchurian hot.
